TURNIP CASSEROLE 
8 lg. peeled turnips
1 stick butter
2 tbsp. flour
1 c. milk
1 onion, chopped
Salt and pepper to taste
Ritz crackers

Cut turnips into small pieces and place in boiling salted water. Cook until tender, approximately 20 minutes, and drain. Melt butter in small saucepan and saute chopped onions until tender. Add flour and stir well. Add milk gradually and cook until very thick. Mix with cooked turnips in a casserole dish. Salt and pepper to taste and top with crumbled Ritz crackers. Dot with butter and bake in a 350 degree oven for 30 minutes.
