HARVARD BEETS 
1/2 c. sugar
3/4 tbsp. cornstarch
1/4 c. mild vinegar
1/4 c. beet juice
1 c. beets or 2 bunches fresh beets
2 tbsp. butter

Mix sugar, cornstarch. Add vinegar and water. Boil 5 minutes. Add beets and set aside. Reheat just before serving and add butter.
