GUISO DE GARBANZOS | |
1 package dried garbanzos 2 cups cubed Spanish chorizo 2 cups cubed smoked ham 2 potatoes, peeled and diced 1 green platano, peeled and diced small 1/2 cup homemade sofrito salt, pepper and adobo, to taste 1 tablespoon capers (no juice) 1/2 cup tomato sauce Remove garbanzos from package and pick out all foreign objects. Wash in water several times and leave in last wash of water overnight. Remove next day and beans should be plump and big! Add to a pot of salted water and cook for 1 hour. Check water level at this time and add if needed. 30 minutes before the hour is up for the beans do the following: In a small pan, add olive oil and brown meat then remove. Add sofrito, spices, capers and tomato sauce and mix around. Return meat back and add potatoes and platanos and some of the bean water and let simmer for 5 minutes. Add this mixture to bean pot after the hour and continue to cook for another 30 minutes. Serve with white rice. Note: You can make this meal a little more time efficient by using can beans, but it will lack the taste. Submitted by: Andy Natal |
