WINTER KIELBASA CASSEROLE 
2 tbsp. butter
1 c. onions
3/4 c. celery, chopped
3 tbsp. flour
3/4 c. beef broth
1 tsp. dried leaf
Thyme
1 bay leaf
1/4 tsp. Tabasco sauce
1 sm. head cabbage, cut in chunks (about 1 c.)
3 med. carrots, cut in chunks (about 1 c.)
3 med. potatoes, cut in chunks (about 2 c.)
1 lb. kielbasa, cut in 1" pieces

Melt butter in medium skillet. Saute onion and celery until crisp-tender. Stir in flour; cook 1 minute. Gradually stir in broth until smooth. Add thyme and Tabasco sauce; mix well.

In a 3 quart casserole, arrange cabbage, carrots, potatoes and kielbasa. Pour broth mixture over all. Add bay leaf. Cover. Bake in a 350 degree oven 45 minutes, uncover. Bake 20 minutes longer or until vegetables are tender.

All I can say is Wow! This casserole has all the down-home flavors of cabbage and potatoes, but with the wonderful accents of parsley and other natural ingredients.

I've made this recipe twice in 2 weeks. I used turkey kielbasa and chicken broth (what I had at hand), and the second time I made it I added a little turmeric (turns food slightly yellow) and caraway seeds. But the basic recipe is a winner! Thanks so much to anyone who made this!
