HEALTHY START MUFFINS | |
2 1/4 c. oat bran 1/2 c. diced dried fruit 1 tsp. cinnamon 1 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. salt 2 lg. egg whites, beaten until frothy 1 c. unsweetened applesauce 1/2 c. brown sugar, packed 1/2 c. buttermilk or lowfat plain yogurt 2 tbsp. veg. oil Lightly spray muffin tins with cooking spray. Mix dry ingredients in a large bowl. Whisk remaining ingredients together in a medium bowl. Add this to oat bran mixture. Place 1/3 cup of mixture into each tin. Bake at 350 degrees for 15 minutes or until muffin springs back when lightly touched. Makes 12 muffins. |
