HEALTHY "VITA - PACK" MUFFINS 
2 c. oat bran
1 c. oatmeal
3/4 c. wheat germ
3 tsp. baking powder
1 c. grated carrots or chopped nuts, raisins, etc.

Mix the above together in a bowl. 1/2 c. lightly packed brown sugar 1/3 c. black strap molasses 4 eggs or I use 4 egg whites (no cholesterol) 1/4 c. sunflower or safflower (or other) oil

Stir dry ingredients in. Fill muffin cups 3/4 full. Makes 8 (3 inch) muffins plus 10 (2 1/2 inch) muffins (my 2 pans). Bake at 400 degrees for 16 to 17 minutes.

Note: "Don't be surprised if a neighbor catches you climbing a chestnut tree out of sheer energy."
