HEALTHY PUMPKIN MUFFINS 
1 c. all-purpose flour
1 c. whole wheat flour
2 tbsp. sugar
1/2 tsp. salt
2 1/2 tsp. baking powder
1/2 tsp. cinnamon
1 egg, beaten
1 c. skim milk
2 tbsp. oil
1/2 can pumpkin
1/2 c. raisins
1/2 tsp. nutmeg

Oven at 400 degrees. Sift together dry ingredients in a large bowl; make a well in the center. In another bowl, combine egg, milk, oil and pumpkin. Pour into flour mixture and stir just until moistened. Add raisins, being careful not to overmix.

Spray muffin tins or line with paper bake cups. Fill 2/3rds full. Bake 20 minutes or until golden.

This recipe was surprisingly good considering there was almost no sugar in it. The muffins were moist even after a couple of days and addictive. I would definitely make again for a healthy option for muffins. The one change I made was that I used all purpose flour for the recipe as I didn't have whole wheat flour.
