TORTELLINI SOUP | |
Salt & pepper 1 pkg. sausage (6) (hot or sweet, whatever you like) 1 bag frozen cheese tortellini 3 cloves garlic, chopped 2 sm. zucchini, sliced 3 carrots, sliced 2 sm. peppers, chopped 1 onion, diced 1 tbsp. oregano 1 tbsp. sweet basil 1 lg. can chicken broth 1 lg. can crushed tomatoes Remove sausage from casing; saute with garlic, zucchini, carrots, peppers and onion for about 15 minutes for crispy vegetables, a little longer for softer vegetables. Use large Dutch oven type pan. Add chicken broth, tomatoes, oregano, basil, salt and pepper. Cook and simmer for about 45 minutes. At about 15 minutes before it is done add tortellini and simmer. Serve with a salad or pasta and Italian bread. Delicious! |
