ORANGE-DATE MUFFINS 
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. orange rind, grated
3/4 c. sugar
1 orange, peeled & sectioned
1/2 c. butter
1/2 c. dates, pitted & chopped
1/2 c. orange juice
1 lg. egg

Combine first 6 ingredients in a large bowl. Make a well in the center; set aside.

In a food processor, place orange sections and remaining ingredients. Process 30 seconds or until mixture is blended but not smooth. Add to dry ingredients, stirring until moistened. Place paper baking cups in muffin pans. Spoon batter into paper cups. Bake at 400 degrees for 15 minutes or until golden brown. Remove from pans immediately. Makes 1 1/2 dozen.
