OATMEAL DATE MUFFINS 
1 (8 oz.) can of crushed pineapple
1 c. sour cream
1 egg
1/4 c. butter, melted
1 1/2 c. flour
1 c. old fashioned oats
1/2 c. sugar
1 tbsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 c. dates, cut fine
1 c. walnuts, chopped

Combine pineapple and juice, sour cream, egg, and softened butter until blended. Combine remaining ingredients. Stir until just mixed. Spoon into muffin cups. Bake at 350 degrees oven for 30 to 35 minutes until lightly brown and toothpick inserted in center comes out clean. Serves warm. Makes 12 muffins.
