OATMEAL MUFFINS | |
1 c. quick cooking rolled oats 1 c. buttermilk 1 egg 1/2 c. brown sugar, packed 1/2 c. vegetable oil 1 c. flour 1 tsp. baking powder 1/2 tsp. salt 1/2 tsp. baking soda 1/2 c. chopped dates (Kim doesn't use) 1/2 c. chopped walnuts (optional) (Kim puts in raisins instead.) Mix all ingredients and spoon into greased muffin tins. Bake at 400 degrees for 15-20 minutes. 12 muffins. |
