BRAN MUFFINS 
1 1/4 c. oat bran (or oat flour made by putting oatmeal in the blender)
1 1/4 c. flour
3 tsp. baking powder
1/4 c. brown sugar
1/4 tsp. salt
1 tsp. cinnamon
2 tsp. non-fat dry milk
1/4 c. chopped walnuts
3/4 c. skim milk
1 tbsp. lemon juice
3 egg whites, beaten with 2 tbsp. corn oil
1/8 c. corn oil
1 tsp. vanilla
1/4 c. raisins
2 c. chopped apples

Preheat oven to 400 degrees. Grease or paper line muffin pan or pans.

1. In large bowl combine all dry ingredients. Mix well.

2. In medium brown, combine all wet ingredients. Mix well.

3. Combine dry and wet ingredients. Stir only to moisten, but batter is lumpy. Spoon into muffin pan. Bake 20 minutes. Take muffins out of pan immediately.
