SWEET POTATO DATE MUFFINS | |
3/4 c. flour 1 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. salt 2 eggs 1/2 c. sugar 1 (17 oz.) can sweet potatoes, drained and mashed 1/2 c. brown sugar 1/4 c. veg. oil 1/4 c. orange juice 1/2 c. pecans, chopped 1 c. dates, chopped 1/4 c. flour Combine first four ingredients in large bowl; mix well and set aside. Mix next six ingredients well and add to dry mixture just until moistened. Dredge the pecans and dates in the 1/4 cup flour then add to above mixture. Pour into prepared muffin tins and bake at 350 degrees for 27 to 30 minutes. Yield: 18 to 20 muffins |
