TWO - GRAIN DATE MUFFINS 
1 1/2 c. all purpose flour
1/2 c. sugar
1 1/2 tsp. baking soda
1/4 tsp. salt
1 1/3 c. milk
1 c. whole bran cereal
1/2 c. old-fashioned or quick oats
3 tbsp. vegetable oil
1 lg. egg
2/3 c. chopped dates

Heat oven to 400 degrees. Spray 12 muffin pan cups with non-stick cooking spray. Mix flour, sugar, baking soda, and salt in a medium bowl. In a large bowl, stir milk, bran cereal and oats. Let stand 2 minutes to soften. Beat in oil and egg. Stir in flour mixture just until moistened. Fold in dates. Fill prepared muffin cups 3/4 full. Bake 15 to 18 minutes until tops are golden brown and a toothpick inserted in center comes out clean. Serve warm or cool on wire racks. Makes 12.
