CARROT BARS 
4 eggs
1 1/2 c. oil
2 c. white sugar
3 c. flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 c. carrots, cooked and blended
1 c. raisins

Cream eggs, oil, and sugar. Add flour, soda, salt, cinnamon, and carrots. If desired, add raisins. Raisins should be boiled, drained and rolled in flour. Mix well. Pour into 1 large cookie sheet and bake at 350 degrees for 30 to 40 minutes.

BROWN SUGAR ICING:

1 1/2 c. brown sugar
1/2 c. cream
2-3 tbsp. butter

Boil 3 to 4 minutes. Beat until thick. Frost bars. NOTE: I usually make a cream cheese icing.
