EASY BEEFY ENCHILADAS 
1 1/2 c. cooked beef, shredded OR
1 1/2 lbs. cooked ground round
1/2 c. onion, chopped
1 can mushroom soup
1 can tomato soup
10 oz. can hot enchilada sauce
12 tortillas
2 c. Cheddar cheese, grated

Combine beef, 1 cup cheese and onion; set aside. In saucepan, combine soups and enchilada sauce; bring to boiling. Quickly dip tortillas in sauce. Divide meat mixture among the tortillas; roll up. Place in large baking dish and top with remaining sauce and remaining 1 cup cheese. Bake at 350 degrees for 25-30 minutes.
