EGG AND SAUSAGE BREAKFAST
CASSEROLE
 
6 eggs
6 slices white bread
1 tsp. dry mustard
1 c. grated cheese
2 c. milk
1 tsp. salt
1 lb. bulk sausage or 1 lb. bacon in 1-inch pieces
1/2 c. sliced mushrooms (optional)

Brown sausage and crumble or brown bacon pieces. Drain meat. Beat eggs. Add cubed bread, milk, salt and mustard. Add cheese, mushrooms and meat. Place in greased 8x12 inch casserole dish. Refrigerate overnight. Bake 30 minutes at 325 degrees. Set out 5 minutes before serving.

Prepared this last night, ready to bake this morning to bring to a potluck breakfast. I'm glad I got up early... it was no where near done after 30 minutes. Mine baked for almost an hour. Otherwise very tasty and simple recipe.
