GOOD ZUCCHINI CASSEROLE 
2 lb. zucchini, grated (peeled or unpeeled)
1 c. sour cream
1 can cream of chicken soup
1 c. grated carrot
1 c. chopped onion
1/2 c. butter, divided
2 eggs
8 oz. Stove Top stuffing, chicken or pork
Grated cheese

Saute onion in 1/4 cup butter along with carrots. Mix all but Stove Top Stuffing, 1/4 cup butter and cheese. Put 1/2 of stuffing cubes and all of seasoning packet in bottom of 9x13 inch cake pan.

Melt 1/4 cup butter and drizzle over stuffing in bottom of pan. Combine sauteed vegetables, cream, soup and eggs, pour in pan. Place remainder of stuffing on top. Add grated cheese. Bake at 350 degrees for 1 hour or until baked through. Check by inserting knife.
