BROCCOLI & RICE QUICHE 
2 c. chopped broccoli
1/2 c. chopped onion
1/2 c. sliced mushrooms
1 1/2 c. cooked brown or white rice
3/4 c. grated cheddar cheese
3 eggs
1/2 c. milk
1/4 tsp. pepper
1/2 tsp. salt

Steam onions and broccoli to soften. Combine rice, cheese, 1 beaten egg, and salt. Press evenly over bottom and sides of a greased pie pan. Beat remaining 2 eggs. Stir in milk, pepper, mushrooms, and pepper. Add broccoli and onions. Spoon mixture into crust. Bake at 375 degrees for 30-40 minutes. Add more grated cheese on top, and bake an additional 10 minutes.
