LOW-CAL BROCCOLI AND RICE QUICHE 
1/2 c. instant rice, cooked
3 med. eggs
3 oz. sharp cheddar cheese, grated
1 1/2 c. chopped broccoli, cooked
3/4 c. mushrooms
Chopped green onion to taste
1/4 c. skim milk
3 tsp. low-cal butter

Spray 9" pie plate with Weight Watcher Spray. Mix rice, 1 egg and half of cheese. Press in pan for crust. Beat together rest of ingredients except cheese. Pour in pie plate. Bake at 375 degrees for 20 minutes. Sprinkle rest of cheese on top and bake for 10 minutes more. Serves 3. 1 bread, 2 protein, 1/2 fat.
