TURKEY SCHNITZEL 
4 big flat slices of breast of turkey, about 1 lb.
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. garlic powder
2 eggs
2 tbsp. water
1/2 c. flour
1/2 c. bread crumbs
Oil for frying

The slices should look like a medium sized steak, 3/4" thick. You may ask the butcher to cut them for you. Pound the meat on both sides to flatten into 1/2" thickness. Rub salt, pepper and garlic powder into the meat. Beat the eggs together with the water. Put the flour on a flat plate, the bread crumbs on another.

In a heavy big skillet heat the oil. Dip the slices of meat into the flour, the eggs and then the bread crumbs. The slices should be perfectly covered on each side. Fry the schnitzles for about 4 to 5 minutes at 350 degrees in electric frying pan, on both sides until golden brown. Serve warm with mashed potatoes or rice. Garnish each schnitzel with a lemon slice.
