HEAVENLY ZUCCHINI 
4 c. zucchini, sliced, keep on most of skin
2 eggs
1 c. mayonnaise
1 onion, chopped
1/2 c. green pepper, chopped
1 c. Parmesan cheese, grated
Tabasco sauce
Italian bread crumbs
Butter

Parboil zucchini for 3 minutes; drain. In casserole mix eggs, mayonnaise, onion, green pepper and Parmesan cheese. Add zucchini and several dashes of Tabasco sauce. Mix together. Top with bread crumbs and more grated cheese. Dot with butter and bake at 350 degrees for 30 minutes.
