SALMON PATTIES 
1 lg. can pink salmon
1/2 c. finely chopped onions
1/4 c. finely chopped bell pepper
1/3 c. finely chopped celery
1 egg
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
1 c. cornmeal

Drain and pick skin and bones from salmon. Add onions, bell peppers and celery. Mix well using hands. Add egg, mix well. Add flour, mix well. Add salt and pepper, mix well. Make into patties. Coat each side with cornmeal. Fry in iron skillet in enough oil to cover half of patty. Cook until golden brown, flip to other side. Cook until golden brown. Makes 6 to 8 patties.
