QUICK SALMON PATTIES 
15 oz. can pink salmon
1 egg
1/3 c. onion, minced
1/2 c. flour
1 1/2 tsp. baking powder
1 1/2 c. shortening

Drain salmon. In medium mixing bowl, mix salmon, egg and onion until sticky. Stir in flour, add baking powder to salmon juice. Stir into salmon mixture and form patties. Fry until golden brown for about 5 minutes.
