MEMA OLMIXON'S PEANUT BUTTER PIE 
Quadrupling this recipe for large family gatherings is strongly recommended!

1/2 cup white sugar
3/4 cup brown sugar
1/4 cup all-purpose flour
1/2 tsp. salt
2 cups warm milk
3 egg yolks
3/4 cup peanut butter (or more)
1 pre-baked pie shell

Combine sugars, flour and salt, thoroughly. Add milk, mix until dry ingredients are completely dissolved. Cook over medium heat stirring CONSTANTLY until very thick. Add a small amount of water to egg yolks and carefully stir into mixture. Add peanut butter and stir until smooth (this may take some physical effort).

Pour into already browned pie shell. Top with meringue and bake at 350°F until meringue is lightly browned. Let cool but best when still slightly warm (though also good as next mornings breakfast).

MERINGUE:

3 egg whites
1/4 cup sugar
1 tsp. vanilla

Make sure beaters and bowl are completely clean and dry and that the egg whites contain NO yolk. Beat egg whites until they begin to stiffen and then SLOWLY beat in sugar and then, finally, vanilla. A good meringue forms stiff peaks when beaters are lifted. Good luck. Enjoy!
