RIPE TOMATO RELISH 
3 qts. tomatoes, peeled and chopped
3 c. chopped celery
2 c. chopped onion
1 c. chopped green pepper
1/4 c. salt
1/2 tsp. pepper

Combine and soak together 3 or 4 hours. Drain in colander. Do not press. Place in pan and add: 1/4 c. brown sugar 1 1/2 tsp. pickling spices (tied in bag) 1 c. vinegar

Simmer 15 minutes. Pack in hot jars, seal. Makes 5 or 6 pints.
