RIPE TOMATO RELISH 
1 pt. ripe tomatoes
1 pt. sliced onions
2 stalks celery
1/2 teacup salt
1 1/2 teacup of brown sugar
3 pkg. white mustard seed
1 qt. vinegar
1 box horseradish
1 1/2 tbsp. pepper
1 tbsp. cinnamon
1 tsp. allspice
1/2 tsp. mace
2 lg. tbsp. prepared mustard

Drop tomatoes in water and skin, cut in small pieces, drain in bag 24 hours, unless the weather is very hot, in which case 8 hours enough. Mix all cold, add vinegar. This will keep 2 years.
