CUCUMBER RELISH | |
6 lg. cucumbers, shredded 2 green peppers, chopped 3 onions 1 tbsp. salt Grind cucumbers. Add salt. Set overnight. Drain and squeeze all the juice out. Add green pepper and onion; add 1 tablespoon mustard seed, 1 tablespoon celery seed, 2 cups sugar and 2 cups of vinegar. Boil for 10 minutes. Put into jars, process in a hot water bath for 5 minutes. 4-5 pints. |
