SWEET CUCUMBER RELISH 
10 c. cucumber, chopped
4 c. onions
5 tbsp. salt
2 1/2 c. white vinegar
6 c. sugar
2 tsp. tumeric
1/2 tsp. black pepper
2 tbsp. cornstarch
2 tsp. celery seed
4 sweet peppers, chopped

Put cucumbers, onions, and salt together. Let stand overnight. Mix well. Then drain. Rinse in cold water and drain again. Put in large kettle with remaining ingredients and boil for 30 minutes (uncovered kettle, stirring constantly). Pour into jars and seal. Makes 6 to 8 pints.
