CHICKEN & BROCCOLI STIR FRY 
Chicken breasts
Onions
Mushrooms
Broccoli
2 tbsp. oil
Soy mixture
2 tsp. cornstarch
1/2 tsp. ground ginger
1/4 c. soy sauce

Boil chicken 15 minutes, then debone. Reserve 1/2 to 1 cup of broth. Cut chicken into medium pieces and place in soy mixture. Cover and refrigerate for 30 minutes. While chicken is marinating, preheat 2 tablespoons oil in wok or large nonstick frying pan.

Add broccoli, onions, mushrooms and stir fry for about 6-10 minutes. Add chicken and continue to cook for 10-15 minutes or to desired doneness.
