BROWN RICE PANCAKES 
3/4 c. brown rice
1 1/2 c. water
2 tbsp. butter
1/4 c. honey
1 1/2 c. milk
2 eggs, separated
1 1/2 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg

Bring rice and water to a boil. Turn down heat and simmer until water is absorbed and rice is soft. (This step can be done ahead of time.)

In a large saucepan combine cooked rice, butter, honey, and milk. Heat until butter melts (this step can be done in the microwave if you use microwavable dish).

Beat egg yolks until frothy with a wire whisk and add to rice mixture. Add in flour, baking powder, cinnamon, and nutmeg. Mix. Beat egg whites until stiff. Fold into rice mixture. Drop batter onto medium hot greased griddle and cook until brown and crisp on both sides. Makes about 2 dozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
