WASHINGTON APPLE CAKE | |
4 c. thinly sliced pared tart apples (5 medium) 3 eggs 2 c. sugar 1 c. cooking oil 2 c. all purpose flour 2 tsp. cinnamon 1 tsp. baking soda 1/2 tsp. salt 1 tsp. vanilla 1 c. walnuts, chopped Frosting: 2 (3 oz.) pkg. cream cheese 1/4 c. melted butter 2 c. powdered sugar 1 tsp. lemon juice Beat eggs with mixer until thick and light. Combine sugar and oil. Pour into eggs with mixer on medium speed. Sift together flour, cinnamon, soda and salt. Add to egg mixture along with vanilla. Beat to mix. Stir in nuts. Spread apples in a buttered 13 x 9 x 2 inch pan. Pour batter over apples, spreading to cover. Bake in a 350°F oven for 1 hour. Remove from oven and cool. Soften cream cheese. Beat until fluffy. Beat in melted butter, then blend in powdered sugar and lemon juice. Spread over cooled cake. Refrigerate. Makes 12 to 15 servings. |
