RECIPE COLLECTION
“WASHINGTON APPLE CAKE” IS IN:

WASHINGTON APPLE CAKE 
3 eggs
1-1/2 c. sugar
1 c. canola oil
1-1/2 c. all-purpose flour
1/2 c. whole wheat flour
2 tsp. cinnamon.
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla extract
1 c. chopped walnuts
4 c. thinly sliced, pared apples (about 5 apples.)

Preheat oven to 350°F.

Spray a 13x9x2-inch baking pan with cooking spray. In large bowl, beat eggs at high speed until thick and light. Combine sugar and oil. Beat into eggs. In another bowl, stir together flours, cinnamon, baking soda and salt. Add to egg mix along with vanilla extract. Stir in walnuts. Spread apples in pan, pour batter over apples, spreading to cover.

Bake for 1 hour or until top is pale golden and apples are cooked to tender. Remove from oven. Cool.

CREAM CHEESE ICING:

2 (3 oz. pkgs.) cream cheese
1/4 c. melted butter
1-3/4 c. confectioners' sugar.
1 tsp lemon juice

In bowl, beat cream cheese until fluffy, beat in butter. Stir in powdered sugar and lemon juice until well combined. Spread over cooled cake.
