FRIED RICE 
1 1/2 c. rice, uncooked
4 strips bacon
2 med. carrots
1/2 med. onion
1 tsp. salt
1/2 tsp. pepper
1 tbsp. soy sauce

Cook rice according to package directions and set aside. Fry bacon until crisp, drain and crumble. Put on medium heat and all ingredients except soy sauce. Cook until veggies are tender. Add rice and mix with veggies. Sprinkle soy sauce in mixture and mix well. Cook 5 minutes on low heat and stir so rice won't stick or burn.
