SPANISH RICE 
1/3 c. salad oil
1 c. chopped onion
3/4 c. chopped green pepper
2/3 c. uncooked rice
2 tsp. salt
1/2 tsp. pepper
1 #2 1/2 can tomatoes (3 1/2 c.)
1 sm. bay leaf

Mix ingredients and pour into 2 quart casserole and cover. Bake in moderate oven (350 degrees) for 1 hour and 15 minutes, stir occasionally.
