GRAMMA ELEANOR'S LEMON PIE 
1 1/2 c. boiling water
1 1/4 c. sugar
1 tbsp. butter
3 eggs, beaten
4 tbsp. cornstarch
1 1/2 c. lemon juice

Mix cornstarch in lemon juice. In large glass bowl, beat eggs. Add other ingredients. Mix well. Put in microwave on high for 2 minutes. Take out, stir. Put back in microwave for 2 minutes. Take out and stir. Pour into baked pie crust. Refrigerate until cold. Serve with Cool Whip.

Since microwave ovens vary in power, you may need to adjust your cooking time.
