GARLIC PARSLEY POTATOES 
3 lbs. med. red potatoes, unpeeled and sliced
1/4 c. olive oil
8 cloves garlic, minced
1 tsp. salt
1/2 tsp. pepper
2 tbsp. chopped parsley, divided

Combine first 5 ingredients in large bowl, toss to coat well. Layer 1/2 potato mixture in greased 12 x 8 x 2 inch dish. Sprinkle with parsley. Layer remaining potato mixture. Cover and bake at 350 degrees for 45 minutes. Uncover and sprinkle with remaining parsley. Makes 8 servings.
