GARLIC-PARSLEY POTATOES 
3 lbs. med. size red potatoes, unpeeled and sliced
1/4 c. oil
8 cloves garlic, minced
1 tsp. salt
1/2 tsp. freshly ground pepper
2 tbsp. chopped parsley (if I don't have parsley, I have used dried basil leaves)

Combine first 5 ingredients in a large bowl; toss to coat well. Layer half of the potato mixture in a lightly greased 12 x 8 x 2 inch baking dish. Sprinkle half of parsley over potatoes. Layer remaining potatoes. Cover and bake at 350 degrees for 45 minutes or until tender.
