HERBED SAUSAGE AND SAGE DRESSING | |
4 cups herbed bread cubes (about 2 days old) or stuffing cubes 1 pound mild Italian sausage, removed from casing 3 cloves garlic, minced 1 large onion, chopped 1/2 cup unsalted butter, melted 3 large eggs, lightly beaten 1/2 cup chicken broth 1/4 teaspoon thyme 1/4 teaspoon ea. garlic and onion powder (or to taste) 1 tablespoons chopped fresh or rubbed sage, chopped 2-3 tablespoons minced fresh parsley Salt and freshly grated black pepper, to taste Preheat your oven to 350°F (180°C). Grease a 9x13-inch baking dish with some melted butter. In a large skillet, cook the sausage and onion over medium heat, breaking it apart with a spoon, until browned and fully cooked (add chopped garlic near the end of cooking). Transfer the cooked sausage to a plate, allowing it to cool briefly. Once the sausage has cooled enough to handle, finely chop it and return it to the skillet. Stir in the melted butter, bread cubes, and chopped sage. Allow the mixture to sit for about 5 minutes, letting the bread absorb the buttery flavors. In a separate bowl, beat the eggs and add the chicken broth, garlic and onion powdec and parsley. Pour the egg mixture over the bread and sausage mixture, mixing everything together until well combined. Season with salt and pepper to taste. Transfer the stuffing mixture to the prepared baking dish or loaf pan and let it stand for 10 minutes to allow the bread to absorb the liquid completely. Cover the dish with aluminum foil and bake for about 25 minutes. Afterward, remove the foil and continue baking for an additional 10-15 minutes, or until the top turns golden brown. Let the Sausage and Sage Dressing rest for a few minutes before serving.
