SPANISH DELIGHT CASSEROLE 
1 bell pepper, chopped
2 med. onions, chopped
1 1/2 lbs. ground beef
1 can cream style corn
1 1/2 tsp. chili powder
1 (6 oz.) can tomato paste
1 1/2 lbs. grated Cheddar cheese
1 (8 oz.) box egg noodles

Preheat oven to 350 degrees. Cook noodles until tender. While noodles are cooking, cook bell pepper and onion in butter until tender. Add ground beef. Cook until done. Add all other ingredients except 1/2 cup of cheese. Simmer 10 minutes. When noodles are done, mix with sauce. Pour into casserole dish. Top with remaining cheese. Bake until cheese melts. Serves 4-6.

My Mom used to make this in the '50's and 60's, and the recipe card on which she wrote it has disintegrated. I have fond memories of this dish, and can remember how it tasted. My kids are in late teens to early twenties now, so may be too sophisticated for it. But a homey reunion is coming up, and I'll try it on them then. Thanks for digging this up.
