PROTEIN ROAST 
2 c. cottage cheese
3 eggs
1 envelope onion-mushroom soup
1 c. Pepperidge Farm stuffing
1/2 lg. can evaporated milk
1 c. chopped pecans (optional)

Mix all ingredients together until well blended. Place in a buttered loaf pan. Bake for 1 hour at 350 degrees. Turn off oven and let the Protein Roast sit in the oven for another half hour. This is a wonderful meatless meal. Serves 6-8 people.
