BANANA DOUGHNUTS 
5 cups sifted all-purpose flour
3 tsp. double-acting baking powder
1 tsp. baking soda
1 tsp. nutmeg
1/4 tsp. salt
1 1/2 cups milk
1 cup sugar
2 bananas, mashed
2 eggs
1 tbsp. melted shortening
1 tsp. vanilla

Sift together first 5 ingredients; set aside. Combine rest of ingredients in a large bowl. Mix well; add dry ingredients to banana mixture. Mix well.

Turn out onto a very well floured board. Roll dough to a thickness of 1/4-inch and cut with a well floured doughnut cutter.

Fry in deep fat heated to 375°F, until evenly browned.
