PERFECT POTATO CORN BAKE | |
1/2 lb. bacon cut into 3/4 inch pieces 1/2 c. chopped green pepper 1/3 c. chopped onion 15 oz. can creamed corn 2 c. milk 3 tbsp. butter 3/4 tsp. salt 1/8 tsp. pepper 2 c. instant mashed potatoes 1/2 c. sour cream 1/4 c. grated Parmesan cheese 2 tbsp. chopped green onion (if desired) Preheat oven to 375. Grease 11x7 or 9 inch square pan. Cook bacon until crisp; drain, reserving 1 tablespoon of drippings. Add pepper and onion to drippings. Cook until tender. Stir in corn, milk, butter, salt and pepper. Cook until simmering. Remove from heat. Stir in potato flakes and sour cream until blended. Spoon into greased pan. Top with bacon, cheese and onion. Bake at 375 for 25 minutes. Serves 6. |
