PERFECT POTATO BREAD 
1 c. vegetable oil
1 c. instant potato flakes
3 pkgs. dry yeast
1 1/2 qts. very warm water (not hot)
1/4 c. sugar
1/4 c. honey
1 tbsp. salt
5 lbs. unbleached flour (more or less)

Mix first six ingredients with 1 cup of flour. Let mixture set for 10 to 15 minutes. It will "work" in bowl. Then mix in 1/2 of remaining flour and salt. Keep mixing in flour until dough is stiff. Knead the dough, adding more flour if dough is too sticky. Kneading time about 10 to 15 minutes. Shape into loaves. Let rise and bake in 350 degree oven until brown.
