VINAIGRETTE 
1 c. olive oil
1/3 c. white wine vinegar
2 cloves garlic (minced)
Dash oregano
Dash salt
Dash pepper
1/2 tsp. dry mustard
2 zucchini, thinly sliced
2 cucumbers, thinly sliced
4 tomatoes, thinly sliced
1 lg. onion, curly sliced
1 sm. jar pimientos
1 bell pepper, thinly sliced in circles

Combine first 7 ingredients in a jar. Shake well to mix.

Layer half of the vegetables in a large bowl. Repeat. Place onions and bell pepper on top. Pour marinade over vegetables. Refrigerate approximately 2 or 3 hours before serving. Approximately 10 servings.
