STIR FRY 
1 tbsp. vegetable oil
3 eggs, beaten
1/4 c. chopped green onion
1 c. chopped celery
1 c. diced, cooked meat (chicken, beef, pork, shrimp)
2 tbsp. vegetable oil
4 c. cooked rice
8 oz. frozen peas
1/2 c. soy sauce

Use a wok or large skillet. Scramble eggs in 1 tablespoon oil; set aside. Saute onion, celery and meat in 2 tablespoons oil. Stir in rice, soy sauce, peas and eggs. Heat, stirring continuously 10 to 15 minutes.
