CUCUMBER RELISH 
12 lg. cucumbers
8 red sweet peppers
2 stalks celery
3 pts. vinegar
6 tbsp. mustard seeds
10 lg. onions
1 sm. red hot pepper
Non iodized salt
5 c. white sugar

Pare and remove seeds from cucumbers. Put cucumbers, onions and peppers through food chopper. Cut celery fine and add to chopped vegetables. Mix in 2 tablespoons salt and let stand 5-6 hours or overnight. Drain. Boil vinegar, sugar and mustard seeds for 5 minutes. Add to vegetable mixture and boil 20 more minutes. Put in hot jars and seal. Makes about 7 pints.
