QUICK AND EASY OMELET 
6 med. potatoes sliced and precooked
1 sm. onion, chopped
3 well beaten eggs
1 sm. can asparagus
Salt and pepper to taste

Brown potatoes, onions and asparagus. Then pour the beaten eggs over mixture and fry until the eggs are brown on one side, then turn and cook on other side, as if turning a pancake. This omelet is different and very tasty.
