BRANDIED SPAGHETTI SAUCE 
Preparation time: 10 minutes. Cooking time: about 15 minutes. Serve: 4.

1/2 c. sliced celery
1 med. onion, chopped
1 clove garlic, minced or pressed
2 tbsp. oil
1 can (16 oz.) stewed tomatoes, mashed
1 c. Italian-style tomato sauce, with or without mushrooms
3/4 tsp. salt
1/2 tsp. dried basil leaves, crumbled
1/4 tsp. each dried thyme & oregano leaves, crumbled
1/8 tsp. black pepper
1/4 c. brandy
2 tbsp. chopped parsley

1. In a medium saucepan, heat oil. Add celery, onion and garlic. Saute until onion is tender but not browned.

2. Add tomatoes, sauce, salt, herbs and pepper.

3. Bring to a boil. Simmer, uncovered, for 15 minutes.

4. Add brandy and parsley. Heat.

5. Serve on hot cooked spaghetti.

Good served with: Italian bread and a tossed green salad. Recipe may be halved or doubled.
