APPLE-CARROT MUFFINS | |
1/2 c. nonfat dry milk powder 3 tsp. powder 1/2 tsp. salt 1/4 tsp. allspice 1/2 tsp. nutmeg 1 tsp. cinnamon 2 1/2 c. whole wheat flour 1 c. honey 1 c. vegetable oil 4 eggs 1 tsp. vanilla 1 c. grated and unpeeled apple 1 c. grated carrots Combine dry ingredients (dry milk, baking powder, salt, allspice, nutmeg, cinnamon and flour). Combine liquid ingredients (honey, oil and eggs). Stir into dry ingredients until just moistened. Fold in apples and grated carrots. Spoon into greased 2 1/2 inch muffin cups. Bake at 400 degrees for 15 or 20 minutes or until done. Makes about 24 muffins. |
